“Why do Catholics believe wine becomes blood?”

How do I help my Catholic friend who believes every communion becomes the body and blood of Christ? What is the difference between your soul and your spirit? My mother died two weeks ago, and I wonder if she is already with God or has to wait. Can you explain that?
